Préparer

Avant de commencer, laver et sécher tous les fruits et légumes. • Détacher des branches 1 c. à soupe de feuilles de thym (doubler la qté pour 4 pers.), puis les hacher grossièrement.• Couper les pommes de terre en morceaux de 1,25 cm (1⁄2 po).• Peler, puis hacher ou presser l’ail.• Trancher finement les champignons.• Hacher grossièrement les épinards.

Cuire la dinde

• Chauffer une grande casserole à feu moyen.• Ajouter 1⁄2 c. à soupe d’huile (doubler la qté pour 4 pers.), puis l’ail, la dinde et le thym. Cuire de 4 à 5 min, en défaisant la dinde en morceaux, jusqu’à ce qu’elle perde sa couleur rosée\*\*.• Assaisonner de la moitié du sel d’ail et poivrer.• Transférer la dinde dans un bol moyen.

Commencer le ragoût

• Dans la même casserole, ajouter 1⁄2 c. à soupe d’huile (doubler la qté pour 4 pers.), puis les champignons et le mélange aromatique. Cuire de 3 à 4 min, en remuant à l’occasion, jusqu’à ce que les légumes ramollissent.• Saler et poivrer.

Cuire le ragoût

• Ajouter les pommes de terre dans la casserole.• Saupoudrer les légumes du mélange d’épices pour sauce, puis remuer pour enrober.• Ajouter le concentré de bouillon, la dinde et 2 tasses d’eau (doubler la qté pour 4 pers.). Porter à ébullition à feu élevé.• Réduire à feu moyen-doux. Laisser mijoter de 12 à 14 min, en remuant à l’occasion, jusqu’à ce que le ragoût épaississe légèrement et que les pommes de terre soient entièrement cuites.• Saler et poivrer, au goût.• Retirer la casserole du feu.

Terminer le ragoût et servir

• Ajouter les épinards au ragoût. Remuer de 1 à 2 min, jusqu’à ce que les épinards tombent.• Répartir le ragoût dans les bols.
