Frying capers takes no time at all, but this extra step will up the ante on this quick turkey pasta. Packed with veggies and finished off with a sprinkle of Parmesan, this is a perfect meal for any night of the week. Ingredients: Crushed tomatoes (crushed tomatoes, tomato puree, tomato paste, water, diced tomatoes, onion, garlic, salt, sugar, citric acid) • Ground turkey • Spaghetti (durum wheat semolina, niacin, ferrous sulphate, thiamine mononitrate, riboflavin, folic acid) (wheat) • Mirepoix (carrot, onion, celery) • Spinach • Capers (capers, water, salt, vinegar, calcium chloride, potassium sorbate) • Parmesan cheese (pasteurized milk, modified milk ingredients, water, modified corn starch and/or potato starch, cheese (milk, bacterial culture, salt, microbial enzyme, lipase), salt, citric acid, sodium phosphate, lactic acid, flavour, sodium citrate, potassium sorbate, caramel colour, beta-carotene, anticaking blend (potato starch, corn starch, dextrose, calcium sulfate, cellulose, natamycin, enzyme)) (milk) • Garlic puree (garlic puree, soybean oil, water, citric acid, phosphoric acid, xanthan gum, potassium sorbate, sodium benzoate) • Zesty garlic blend (granulated garlic, cornmeal, salt, dehydrated red bell pepper flakes, spices, sugar, herbs, canola oil, silicon dioxide, citric acid) (sulphites).

Preparation

Cook spaghetti

  • Before starting, to a large pot, add 10 cups hot water and 2 tsp salt (use same for 4 servings). Cover and bring to a boil over high heat. 
  • Wash and dry all produce. 
  • When water is boiling, add spaghetti. Cook uncovered for 10-12 min, stirring occasionally, until tender. 
  • Drain and return spaghetti to the same pot, off heat.

Prep and fry capers

  • Meanwhile, line a plate with paper towels.
  • Heat a large non-stick pan over medium-high.
  • Drain and rinse capers, then pat dry with paper towels.
  • When the pan is hot, add 2 tbsp (4 tbsp) oil, then capers. Fry for 3-4 min, until crispy.
  • Remove with a slotted spoon to the prepared plate.

Cook aromatics and turkey

  • Add mirepoix to the same pan. Cook for 1-2 min, stirring occasionally, until veggies start to soften.
  • Add turkey, Zesty Garlic Blend and garlic puree. Cook for 3-4 min, breaking up turkey into smaller pieces, until no pink remains.** 
  • Season with salt and pepper.

Make sauce

  • Add crushed tomatoes and 1/4 tsp (1/2 tsp) sugar to the turkey mixture. Cook, stirring occasionally, until well combined, 1 min. Season with salt and pepper.
  • Stir 1 tbsp (2 tbsp) butter into sauce, until melted. Remove from heat.
  • Add sauce into the pot with spaghetti. Add spinach, then stir for 1 min, until spinach is wilted.

Finish and serve

  • Divide pasta between bowls.
  • Top with Parmesan and fried capers.
