These beef-and-mushroom open-faced sandwich melts, filled to the brim with flavour, will be a new family favourite! Plus, they're on the table in 15 minutes. It doesn't get much better than that. Ingredients: Ground beef • Sandwich bun (unbleached untreated enriched wheat flour (wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), water, sea salt, yeast, malted barley flour) (barley, wheat) • Mushrooms • Mozzarella cheese (pasteurized milk, modified milk ingredients, water, cream, salt, fructose, calcium chloride, bacterial culture, microbial enzyme, microbial rennet, citric acid, sodium phosphate, sodium citrate, potassium sorbate, cellulose, natamycin) (milk) • Yellow onion • Spring mix (lolla rosa multi-leaf lettuce, red flash red oak lettuce, red leaf multi-leaf lettuce, green oak lettuce, bally hoo tango lettuce) • Ranch dressing (canola and/or soya oil, buttermilk (partly skimmed milk, salt, bacterial culture), white vinegar, water, sugar, salt, frozen egg yolk, spices, polysorbate 60, xanthan gum, natural flavour, monosodium glutamate, lactic acid, sodium benzoate, calcium lactate, calcium disodium EDTA) (egg, milk) • Garlic spread (margarine (soybean oil, water, modified palm and palm kernel oils, salt, vegetable monoglycerides, soy lecithin, potassium sorbate, natural flavour, citric acid, annatto and turmeric, vitamin A palmitate, vitamin D2), garlic, onion powder, water, salt, vegetable mono and diglycerides, maltodextrin, citric acid, parsley, natural flavour, xanthan gum, potassium sorbate, natural colour, vitamin E) (soy) • Salad topping mix (cranberries, sunflower oil, cane sugar, roasted sunflower seeds, roasted salted soya nuts, pepitas seeds, soybean oil and/or canola) (soy) • Beef stock powder (salt, sugars (dextrose, corn syrup solids, maltodextrin), hydrolyzed vegetable proteins (soy), palm oil, corn starch, dehydrated onion, caramel colour (sulphites), silicon dioxide, herbs, disodium inosinate, disodium guanylate, spice extracts, natural flavour) (soy, sulphites).

Preparation

Cook beef and onions

  • Before starting, preheat broiler to high.
    Wash and dry all produce.
  • Heat a large non-stick pan over high. 
  • When hot, add beef and onions to the dry pan. Cook, breaking up beef into smaller pieces, until no pink remains, 3-4 min.** 
  • Carefully drain and discard excess fat.
  • Season with salt and pepper.

Prep and cook veggies

  • Meanwhile, thinly slice mushrooms. 
  • Once beef is cooked, add mushrooms and half the garlic spread to the pan. 
  • Cook for 2-3 min, stirring often, until mushrooms have softened.

Finish filling and toast buns

  • Add half the beef stock powder (use all for 4 servings) and 1/4 cup (1/2 cup) water. Cook for 1-2 min, stirring often, until slightly thickened.
  • Remove the pan from heat, then top with cheese and cover, to allow cheese to melt. 
  • Meanwhile, halve buns and spread cut sides with remaining garlic spread. 
  • Arrange buns on an unlined baking sheet, cut-sides up, then broil for 1-2 min, until golden. (TIP: Keep an eye on buns so they don't burn!)

Finish and serve

  • To a large bowl, add spring mix.
  • Drizzle ranch dressing over top, then toss to combine. 
  • Top with salad topping mix.
  • Divide filling between toasted buns. 
  • Divide melts and salad between plates.
