If you've opted to add eggs, in a separate large non-stick pan, heat 1 tbsp (2 tbsp) butter over medium.Crack in 2 (4) eggs. Season with salt and pepper. Pan-fry 2-3 min, covered, until egg whites are set.** Remove from heat. (NOTE: Yolks will still be runny. Pan-fry eggs using oil instead of butter, if you like.)
