This savoury, flavourful dish features chow mein noodles tossed with Beyond Meat® and crisp sugar snap peas. Hoisin and soy sauce add richness and an umami depth to each bite. Quick to prepare and super-satisfying, this recipe is a perfectly delicious weeknight meal. Preparation

Cook chow mein noodles

  • Before starting, to a large pot, add 6 cups (12 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high heat. Wash and dry all produce.
  • To the boiling water, add chow mein noodles.
  • Cook uncovered for 1-2 min, until tender.
  • Drain noodles, reserving 1/4 cup (1/2 cup) noodle water. Using a strainer, rinse noodles under warm water and then return to the same pot, off heat.

Prep

  • Thinly slice green onions. 
  • Halve sugar snap peas crosswise.

Cook Beyond Meat®

  • Heat a large non-stick pan over medium-high. When hot, add half the sesame oil, then Beyond Meat® patties, garlic puree, sesame seeds, half the green onions and 1 tsp (2 tsp) sugar. Cook for 5-6 min, breaking up patties into smaller pieces, until no pink remains.**
  • Transfer Beyond Meat® to a medium bowl. Set aside.

Cook veggies

  • Reheat the same pan over medium.
  • When hot, add sugar snap peas. Cook for 4-5 min, stirring often, until tender crisp.

Finish and serve

  • To the large pot with noodles, add Beyond Meat®, sugar snap peas, soy sauce, hoisin sauce, remaining sesame oil and reserved noodle water. Stir to combine. 
  • Divide scallion Beyond Meat® noodles between bowls. 
  • Sprinkle remaining green onions over top.

If you've opted to get Beyond Meat®, cook for 5-6 min, in the same way as the turkey, breaking up patties into smaller pieces, until crispy.**
