• Preheat oven to 240°C/220°C fan-forced. • Place sweet potato fries on a lined oven tray. Drizzle with olive oil, season with a pinch of salt and toss to coat. Bake until tender, 25-30 minutes. • Cut haloumi into 1cm-thick slices. In a medium bowl, add haloumi and cover with water. TIP: If your oven tray is crowded, divide the fries between two trays.
• Meanwhile, thinly slice brown onion and tomato. • In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook onion, stirring regularly, until softened, 5-6 minutes. • Reduce heat to medium. Add the balsamic vinegar, brown sugar and a splash of water and mix well. Cook until dark and sticky, 3-5 minutes. Transfer to a small bowl.
• With 5 minutes remaining on the fries, halve bake-at home burger buns and bake directly on a wire oven rack and bake until heated through, 2-3 minutes. • Meanwhile, drain haloumi and pat dry. • Return frying pan to medium-high with a drizzle of olive oil. • Cook haloumi until golden brown, 1-2 minutes each side.
• Spread bun bases with the tomato relish. Top with mixed salad leaves, tomato, haloumi and caramelised onion. • Serve with sweet potato fries. Enjoy!
