with Basil Pesto and Goat Cheese
We love zucchini all year long and this dish combines some of our favourite flavours: sweet bell peppers, zucchini and basil pesto! A little squeeze of lemon at the end brings the whole dish together. If you've opted to add bacon, cut strips in half crosswise. Heat a large non-stick pan over medium. When hot, add bacon. Cook for 5-7 min, flipping occasionally, until crispy.** Remove from heat. Using tongs, transfer bacon to a paper towel-lined plate. Set aside. Discard bacon fat from the pan, then carefully wipe clean. Use the same pan to cook veggies in step 4.
Roughly chop bacon. Sprinkle bacon and remaining Parmesan over top.
