Welcome to your dream dinner: flavour-bomb chorizo sandwiches, inspired by a popular Argentinian street food, with speedy salsa and salad on the side. Ingredients: Chorizo sausage (pork, water, sugars (dextrose), spices, salt, paprika, potassium chloride, potassium phosphate, flavour, dehydrated onion, dehydrated garlic, sodium erythorbate, sodium diacetate, paprika extractives, spice extractives, bakon Hfbn) • Roma tomatoes • Sandwich bun (unbleached untreated enriched wheat flour (wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), water, sea salt, yeast, malted barley flour) (barley, wheat) • Greek pesto (water, parsley, soybean oil, onions, lemon juice, garlic, salt, modified cornstarch, herbs, citric acid, potassium sorbate) • Spring mix (lolla rosa multi-leaf lettuce, red flash red oak lettuce, red leaf multi-leaf lettuce, green oak lettuce, bally hoo tango lettuce) • Mayonnaise (canola and/or soy oil, liquid whole egg, frozen egg yolk, water, salt, sugar, vinegar, concentrated lemon juice, spice extract, mustard, lactic acid, calcium disodium EDTA) (mustard, egg) • Pepitas • Garlic puree (garlic puree, soybean oil, water, citric acid, phosphoric acid, xanthan gum, potassium sorbate, sodium benzoate) • Red wine vinegar (wine vinegar, potassium sorbate, sulphites) (sulphites) • Chili flakes • Smoked paprika (sweet paprika powder, smoked oil, canola oil).

Preparation

Prep and cook chorizo

  • Heat a large non-stick pan over medium-high heat.
  • Meanwhile, slice buns, keeping one side intact. 
  • Cut tomatoes into 1/2-inch pieces.
  • When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then chorizo, smoked paprika and garlic puree.
  • Cook, breaking up chorizo into smaller pieces, until no pink remains, 3-4 min.**
  • Carefully drain and discard excess fat.

Make chimichurri and toast buns

  • Meanwhile, add pesto and 1/4 tsp (1/2 tsp) chili flakes to a small bowl. Stir to combine.
  • Arrange buns on an unlined baking sheet, cut-sides up.
  • Broil buns in the middle of the oven until golden-brown, 1-2 min. (TIP: Keep an eye on buns so they don't burn!)

Make salad

  • Add half the vinegar (use all for 4 ppl), 1/2 tsp (1 tsp) sugar and 1 tbsp (2 tbsp) oil to a large bowl. Season with salt and pepper, then whisk to combine.
  • Add spring mix and half the tomatoes, then toss to combine.
  • Set aside.

Assemble sandwiches

  • Spread mayo on bottom buns, then top with chorizo mixture
  • Top with as much pesto mixture as desired, then remaining tomatoes. Close with top buns.

Finish and serve

  • Divide sandwiches and salad between plates.
  • Sprinkle pepitas over salad.
