Before starting, preheat the oven to 450°F and wash and dry all produce. Peel, then cut potatoes into 1/2-inch pieces. Toss potatoes with 1 tbsp oil on a baking sheet. Season with half the garlic salt and pepper. Roast in the middle of the oven, until golden-brown, 25-28 min.
While potatoes roast, trim the beans. Stir together the mustard and honey in a small bowl. Pat salmon dry with paper towels, then season with the remaining garlic salt and pepper.
Arrange salmon on a parchment-lined baking sheet. Brush the honey mustard over top of the fillets. Bake in the top of the oven, until salmon is cooked through, 10-12 min.\*\*
While the salmon bakes, heat a large non-stick pan over medium-high heat. When hot, add 1 tbsp oil (dbl for 4 ppl), then beans. Cook, stirring occasionally, until beans are tender-crisp, 4-5 min. Remove from heat. Season with salt and pepper. Cover the pan and set aside.
