Creamy brie, sweet apples and savoury croutons — all of your favourite salad fixings in one meal! A drizzle of honey-blueberry vinaigrette will take this salad over the top. Ingredients: Gala apple • Brie cheese (milk, salt, bacterial culture, microbial enzyme, mould culture) (milk) • Spring mix (lolla rosa multi-leaf lettuce, red flash red oak lettuce, red leaf multi-leaf lettuce, green oak lettuce, bally hoo tango lettuce) • Cucumber • Croutons (wheat flour, vegetable oil, sugars (sugar, lactose), rice flour, salt, yeast, garlic powder, herbs, yeast extract, natural flavor (contains milk), silica, tricalcium phosphate) (milk, wheat) • Walnuts • Blueberry jam (sugar/glucose-fructose, blueberries, water, fruit pectin, citric acid, mono- and diglycerides) • Honey • Balsamic vinegar (wine vinegar, cooked grape must, grape juice concentrate, caramel colour, natural flavour, sulphites) (sulphites).

Prep

  • Cut cucumber into 1/4-inch rounds.
  • Cut brie into 1/4-inch pieces.
  • Core, then cut apple into 1/4-inch wedges.

Make dressing

  • Add honey, blueberry jam, vinegar and 1 1/2 tbsp (3 tbsp) oil to a large bowl.
  • Season with salt and pepper, then whisk to combine. Set aside.

Toast walnuts

  • Heat a large non-stick pan over medium-high heat.
  • When hot, add walnuts to the dry pan. Toast, stirring often, until golden, 3-4 min. (TIP: Keep your eye on walnuts so they don't burn!)
  • Transfer to a plate.

Toss salad

  • Add cucumber, apples, spring mix and croutons to the large bowl with dressing.
  • Toss to combine.

Finish and serve

  • Divide salad between bowls.
  • Top with brie and toasted walnuts.
