• In a medium bowl, combine diced chicken, savoury seasoning, a pinch of
salt and pepper and a drizzle of olive oil.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
Cook chicken, tossing occasionally, until browned and cooked through,
5-6 minutes. Transfer to a plate and cover to keep warm.
TIP: Chicken is cooked through when it's no longer pink inside.
• Meanwhile, thinly slice radish. Roughly chop cucumber.
• Cut or tear ciabatta into bite-sized chunks.
• Return the frying pan to medium-high heat with a generous drizzle of
olive oil. Cook ciabatta, tossing, until golden and slightly crispy,
5-6 minutes. Season to taste.
• In a large bowl, combine Dijon mustard, the honey and a drizzle of vinegar
and olive oil. Season to taste.
• Add mixed salad leaves, ciabatta, radish and cucumber. Toss to coat.
• Divide crouton salad between bowls. • Top with savoury chicken and drizzle over caesar dressing to serve. Enjoy!
