If you've opted to add chicken tenders, while pan heats, pat chicken dry and cut into 1-inch pieces. Season with salt and pepper. When hot, add 1 tbsp (2 tbsp) butter, then swirl until melted. Add red onions and chicken. Season with salt and pepper. Cook for 2-3 min, stirring occasionally, until onions are softened. Add spinach.
