Preparation

Roast the chat potatoes

• Preheat oven to 240°C/220°C fan-forced. Halve chat potatoes.
• Place potatoes on a lined oven tray. Drizzle with olive oil, season with saltand pepper and toss to coat.
• Roast until tender, 25-30 minutes.


ELEVATE ME: If you've added extra ingredients to this recipe, pick thyme leaves 
and sprinkle over potatoes before roasting.

Cook the pork steaks

• When potatoes have 15 minutes remaining, season pork loin steaks with salt and pepper.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• When oil is hot, cook pork steaks until cooked through, 3-4 minutes each side (cook in batches if your pan is getting crowded).
• Transfer to a plate, cover and rest for 5 minutes.

Cook the greens

• Meanwhile, trim green beans and baby broccoli. Halve any thicker stalks of baby broccoli lengthways.
• Wipe out frying pan and return to medium-high heat with a drizzle of olive oil. Cook green beans and baby broccoli, tossing, until tender, 5-6 minutes.
• Reduce heat to medium, then add garlic paste and cook until fragrant, 1 minute. Season to taste with salt and pepper. 


TIP: Add a dash of water to the pan to help speed up the cooking process.

Finish & serve

• Slice pork (if preferred).
• Divide roast chat potatoes, seared pork steaks and garlicky greens between plates.
• Drizzle over creamy pesto dressing to serve. Enjoy! 


ELEVATE ME: If you’ve added extra ingredients to your recipe, slice lemon into wedges. Sprinkle flaked almonds over greens and serve with lemon wedges.
