In a large pot, melt 2 TBSP butter (4 TBSP for 4 servings) over medium-high heat. Add tomatoes and cook, stirring occasionally, until tomatoes begin to blister, 1-2 minutes. (TIP: Reduce heat to medium if butter begins to burn.)
Add garlic powder and Italian seasoning and stir to coat tomatoes.
Add 1/2 cup water (1 cup for 4 servings), cream sauce base, and veggie stock to pot with tomatoes; stir to combine.
Add raviolis and stir to evenly coat.
Cover pot with lid. Cook 3 minutes, covered, or until raviolis are tender. Uncover and reduce heat to medium. Cook until raviolis are fully cooked and sauce has thickened, 3-4 minutes, stirring constantly.
Remove pot from heat and add creme fraiche. Stir until creme fraiche is evenly combined. Taste and season with salt and pepper.
Divide savory mushroom raviolis and sauce between bowls. Top with ricotta and walnuts. Season ricotta with salt and pepper.
