This tofu has layers upon layers of flavour, first being cooked in our staple sweet-soy seasoning, then being tossed in sweet chilli! Sesame-crusted kūmara fries and a crunchy, zingy slaw act as the perfect side-kicks to this superstar dish.

• Preheat oven to 240°C/220°C fan-forced. Peel kumara and cut into fries.
• Place on a lined oven tray. Season with salt, drizzle with olive oil, sprinkle over sesame seeds and toss to coat.
• Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
• Meanwhile, thinly slice apple into wedges.
• Cut plain tofu (see ingredients) into 2cm chunks.
• In a large bowl, combine tofu, sweet soy seasoning and a drizzle of olive oil.
• In a large frying pan, heat a generous drizzle of olive oil over medium-high heat.
• When the oil is hot, cook tofu, turning occasionally, 4-5 minutes.
• Add sweet chilli sauce and cook, turning to coat, until fragrant, 1 minute.
• Combine apple, shredded cabbage mix, and Asian chilli dressing (see ingredients) in a large bowl. Season to taste.
• Divide sweet soy tofu, sesame kumara fries and Asian chilli slaw between
plates. Serve with mayonnaise. Enjoy!
