Prep

  • Before starting, wash and dry all produce.
  • Thinly slice green onion, keeping green and white parts separate.
  • Thinly slice mushrooms.
  • Cut bok choy into 1/2-inch pieces. (TIP: Rinse bok choy leaves to wash away any dirt.)

Cook beef and mushrooms

  • Heat a large pot over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, beef, mushrooms, green onion whites, brown sugar and half the stock powder. Season with salt and pepper. Cook for 4-6 min, stirring often, until veggies are tender and beef is cooked through.**
  • Add soy sauce mirin blend. Cook for 30 sec, stirring often, until fragrant.

  • To the pot, add remaining stock powder and 3 cups (6 cups) of water. Bring to a boil over high.
  • Once broth is boiling, add carrots, bok choy and noodles.
  • Cook for 2-3 min, using tongs to separate noodles, until veggies and noodles are tender. 
  • Season with salt and pepper.

  • Divide noodles, broth and veggies between bowls.
  • Sprinkle crispy shallots and remaining green onions over top.
