If you've opted to add chicken breasts, while water is boiling, pat chicken dry with paper towels. Season with salt and pepper. Heat a large non-stick pan over medium. When hot, add 1 tbsp (2 tbsp) oil, then chicken. Sear for 6-7 min per side, until chicken is golden and cooked through.** Transfer to a plate. Cover to keep warm. Carefully wipe pan clean. Use the same pan to cook bacon.
Thinly slice chicken.Top bowls with chicken.
