If you've opted for beef, heat a large non-stick pan over medium-high. When hot, add beef and corn to the dry pan. Season with salt and pepper. Cook for 4-6 min, breaking up beef into smaller pieces until beef is cooked through.** Carefully drain and discard excess fat. Add Southwest Spice Blend, remaining vegetable stock powder and 1/4 cup (1/2 cup) water. Stir to combine. Remove from heat.
