Carb Smart is based on a per serving calculation of the recipe's carbohydrate amount. Prep

  • Before starting, wash and dry all produce.
  • Cut cucumber into 1/4-inch rounds. 
  • Thinly slice radishes. 
  • Halve tomatoes.

Cook halloumi

  • Cut halloumi into 1/4-inch slices. 
    Using a strainer, rinse halloumi in cold water, then pat dry with paper towels. Season with pepper. 
  • Heat a large non-stick pan over medium heat. When hot, add halloumi to the dry pan. (NOTE: Don't crowd the pan. For 4 servings, cook in batches) Cook for 2-3 min per side, until golden.

Make dressing

  • Meanwhile, in a small bowl, add guacamole and ranch. Season with salt and pepper, then stir to combine.

Toast seeds

  • Heat a small non-stick pan over medium-high.
  • When hot, add seeds to the dry pan. Toast for 3-4 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn.)
  • Transfer to a plate.

Finish and serve

  • Divide spring mix between plates, then top with tomatoes, cucumbers, radishes and halloumi. 
  • Drizzle dressing over salad. 
  • Sprinkle feta and seed blend over top.
