Ingredients: Organic chicken breast • Clementine • Spring mix (lolla rosa multi-leaf lettuce, red flash red oak lettuce, red leaf multi-leaf lettuce, green oak lettuce, bally hoo tango lettuce) • Salad topping mix (soy) (cranberries, sunflower oil, cane sugar, roasted sunflower seeds, roasted salted soy nuts, pepitas seeds, soybean oil and/or canola) • Feta cheese (milk) (pasteurized milk, partly skimmed milk, modified milk ingredients, water, salt, lipase, bacterial culture, microbial enzyme, cellulose, potassium sorbate, lactic acid, natamycin, calcium chloride) • White wine vinegar (sulphites) (wine vinegar, potassium metabisulfite) • Whole grain mustard (mustard) (water, white vinegar, mustard seeds, white wine vinegar, salt, sugar, mustard bran, citric acid, turmeric, spices, spice extract, natural flavour, xanthan gum) • Zesty garlic blend (sulphites) (granulated garlic, cornmeal, salt, dehydrated red bell pepper flakes, spices, sugar, herbs, canola oil, silicon dioxide, citric acid).

Preparation

Cook chicken

  • Before starting, wash and dry all produce.
  • Pat chicken dry with paper towels, then season with salt, pepper and Zesty Garlic Blend. 
  • Heat a large non-stick pan over medium-high.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then chicken.
  • Sear for 3-4 min per side, until golden and cooked through.**
  • Remove from heat, then transfer chicken to a cutting board.

Prep and make dressing

  • Meanwhile, peel clementines, then separate into segments.
  • To a large bowl, add vinegar, mustard, 1/2 tsp (1 tsp) sugar and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then whisk to combine.

Toss salad

  • To the large bowl with dressing, add clementines and spring mix. Toss to combine.

Finish and serve

  • Divide salad between plates. Top with chicken.
  • Sprinkle salad topping mix and feta over top.

If you've opted to get organic chicken breasts, cut into 1-inch-wide strips, then prepare and cook in the same way the recipe instructs you to prepare and cook chicken breast tenders.
