These super-satisfying, no-fuss salad bowls are perfect any night of the week! Grilled chicken breasts are served on top of a bright and crunchy salad and finished off with a drizzle of punchy peanut satay sauce, ticking all of the flavour and texture boxes. Ingredients: Chicken tenders • Coleslaw mix (carrot, green cabbage, red cabbage) • Baby tomatoes • Spring mix (lolla rosa multi-leaf lettuce, red flash red oak lettuce, red leaf multi-leaf lettuce, green oak lettuce, bally hoo tango lettuce) • Peanut butter (peanuts, sugar (sugar, cane sugar, corn maltodextrin), soybean oil, hydrogenated vegetable oil (cotton seed oil, rapeseed oil), palm oil, salt, mono- and diglycerides) (peanut) • Sweet chili sauce (sugars (sugar, glucose), water, modified corn starch, apple cider vinegar, vinegar, chili peppers, salt, ginger, dehydrated red bell pepper, spices, dried garlic, crushed chilies, soybean oil, natural flavour, xanthan gum, acetic acid, citric acid, canola oil, paprika oleoresin, natural paprika flavour, caramel, potassium sorbate, sodium benzoate, calcium disodium EDTA) • Peanuts • Rice vinegar (rice vinegar, water, sugar, salt, potassium metabisulphite) (sulphites) • Soy sauce (water, wheat, soybeans, salt, hydrolyzed soya protein, sugars (sugar, glucose solids, molasses, corn syrup solids), seasoning agents, caramel colour, licorice extract, modified cornstarch, citric acid, sodium benzoate, sodium propionate, potassium sorbate, alcohol) (soy, sulphites, wheat) • Cilantro • Cumin-turmeric blend (cumin, turmeric, silicon dioxide).

Preparation

Prep

  • Lightly oil the grill. Preheat the grill to medium (approx. 400°F).
    Wash and dry all produce.
  • Halve tomatoes.
  • Roughly chop cilantro.

Make slaw and peanut sauce

  • To a large bowl, add coleslaw cabbage mix, tomatoes, vinegar, 1/2 tsp (1 tsp) sugar and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper. Toss to combine.
  • To a small bowl, add peanut butter, half the sweet chili sauce, half the Cumin-Turmeric Spice Blend and 1/4 tbsp  (1/3 cup) warm water. Season with salt and pepper. Whisk to combine.

Prep and grill chicken

  • Pat chicken dry with paper towels.
  • To another large bowl, add chicken, soy sauce, remaining sweet chili sauce, remaining Cumin-Turmeric Spice Blend and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper. Toss to coat.
  • Add chicken to the grill. Close lid and grill for 4-6 min, flipping halfway, until cooked through.**

Finish and serve

  • Add spring mix to bowl with slaw. Toss to coat.
  • Divide salad between plates
  • Top with chicken and a drizzle of peanut sauce. Sprinkle peanuts and cilantro over top.
