Busy weeknight? This Southwest-style turkey orzoyyo is a one-pot meal you can rely on. Bursting with not-too-spicy flavours, it’s uncomplicated and packed with protein, carbs and veggies, making it perfect for leftovers! Ingredients: Ground turkey • Orzo (wheat) (durum wheat semolina, niacin, ferrous sulphate, thiamine mononitrate, riboflavin, folic acid) • Sweet bell pepper • Thaw-friendly corn (corn, modified vinegar) • Spinach • 35% Cream (milk) (cream, milk, dextrose, cellulose gel, carrageenan, mono and diglycerides, cellulose gum, polysorbate 80, sodium citrate, disodium phosphate) • White cheddar cheese (milk) (pasteurized milk, modified milk ingredients, cream, salt, calcium chloride, bacterial culture, microbial enzyme, microbial rennet, cellulose, natamycin) • Cream sauce spice blend (wheat) (wheat flour, salt, garlic powder, onion powder, canola oil, silicon dioxide) • Vegetable stock powder (soy, sulphites) (salt, sugars (dextrose, corn syrup solids, sugar), dehydrated vegetables (sulphites) (carrot, potato, onion, leek, red and green bell peppers, cabbage, celery, tomato, garlic), hydrolyzed vegetable proteins (corn, soy), potato starch, palm oil, corn starch, yeast extract, canola oil, spice extracts, herb, turmeric extract, natural flavor) • Southwest spice blend (spices, paprika powder, garlic powder, onion powder, salt, herbs, canola oil, oleoresin paprika, silicon dioxide) • Green onion.

Preparation

Prep

  • Before starting, wash and dry all produce.
  • Thinly slice green onions, keeping white and green parts separate. 
  • Core, then cut pepper into 1/2-inch pieces.

Cook turkey and veggies

  • Heat a large pot over high. 
  • When hot, add 1 tbsp (2 tbsp) oil, turkey, corn, peppers and green onion whites. Season with Southwest Spice Blend, salt and pepper. Cook for 4-6 min, breaking up turkey into smaller pieces, until no pink remains.**

Cook orzo

  • Add orzo and Cream Sauce Spice Blend. Season with salt and pepper. Stir to combine.
  • Add stock powder and 2 cups (3 1/2 cups) water. Bring to a boil over high.
  • Once boiling, reduce heat to medium-low. Cover and cook for 12-15 min, stirring occasionally, until orzo is tender and most of the liquid has absorbed.

Finish orzo

  • Meanwhile, roughly chop spinach.
  • Once orzo is tender, remove from heat.
  • Add cream and spinach. Stir until spinach wilts. Cover and let sit for 3-4 min before serving. (TIP: For a lighter sauce consistency, add water, 1-2 tbsp at a time.)

Finish and serve

  • Divide orzotto between bowls.
  • Sprinkle cheese and remaining green onions over top.
