If you've opted to get halloumi, cut halloumi into 1/4-inch slices. Using a strainer, rinse halloumi in cold water, then pat dry with paper towels. To a large bowl, add halloumi and 1 tbsp (2 tbsp) oil. Season with salt, pepper and half the Enchilada Spice Blend. Toss to coat.
Add halloumi to one side of the grill. Grill for 1-2 min per side, until golden. Transfer halloumi to a plate.
Skip the step to cut halloumi in half before serving.
