You're going to love this winner dinner! Toss tender pork strips in sweet chilli sauce, then serve with crunchy fried noodles and a garlicky rainbow salad to keep the carbs down and the flavour up.

• Thinly slice cucumber and spring onion.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• When oil is hot, cook pork steaks until cooked through, 3-4 minutes each side (cook in batches if your pan is getting crowded).
• Return all pork to pan. Reduce heat to medium, then add sweet chilli sauce and the soy sauce, tossing, until warmed through, 1-2 minutes.
TIP: Cooking the meat in batches over high heat helps it stay tender.
• While the pork is cooking, in a large bowl, add cucumber, spring onion, slaw mix and mixed salad leaves.
• Toss to coat. Season to taste with salt and pepper.
• Divide sweet chilli pork and salad between bowls.
• Drizzle over sesame dressing.
• Top with crunchy fried noodles (see ingredients).
• Spoon any remaining sauce from pan over beef.
• Serve with garlic aioli. Enjoy!
