• Cut tomato into thin wedges.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook
sliced onion until tender, 3-4 minutes.
• Add pulled pork, stirring, until heated through, 1-2 minutes.
• SPICY! This is sauce is hot, but use less if you’re sensitive to heat! Remove from
heat, then stir in mild chipotle sauce and the butter.
• In a large bowl, combine mixed salad leaves, tomato and a drizzle of white wine vinegar and olive oil. Season to taste with salt and pepper. • Microwave mini flour tortillas on a microwave-safe plate in 10 second bursts until warmed through.
• Fill tortillas with salad and chipotle pulled pork.
• Sprinkle over Cheddar cheese and pickled jalapeños (if using).
• Top with light sour cream to serve. Enjoy!
