Eggs for dinner is always a great idea! These fried egg and ground beef bowls feature chili flakes for kick and sesame seeds for an extra pop of flavour and crunch, making this veggie-loaded dish a can't-miss. Ingredients: Bok choy • Ground beef • Jasmine rice • Mirepoix (carrot, onion, celery) • Grade A egg • Edamame (soy) • Sesame oil • Spicy mayonnaise (vegetable oil, chili peppers, frozen egg yolk, sugars (sugar, glucose), water, vinegar, salt, garlic, concentrated lemon juice, mustard, xanthan gum, acetic acid, citric acid, caramel, sodium benzoate, potassium sorbate, calcium disodium EDTA) (egg, mustard) • Sesame seeds • Soy sauce (water, wheat, soybeans, salt, hydrolyzed soya protein, sugars (sugar, glucose solids, molasses, corn syrup solids), seasoning agents, caramel colour, licorice extract, modified cornstarch, citric acid, sodium benzoate, sodium propionate, potassium sorbate, alcohol) (soy, sulphites, wheat) • Chili flakes • Garlic salt (salt, garlic powder, silicon dioxide).

Preparation

Cook rice and prep

  • Before starting, add 1 cup (2 cups) water and 1/4 tsp (1/2 tsp) garlic salt to a medium pot. Cover and bring to a boil over high heat. 
    Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear.
  • Add rice and edamame to the boiling water, then reduce heat to low. 
  • Cover and cook for 12-14 min, until rice is tender and liquid is absorbed.
  • Remove from heat. Set aside, still covered.
  • Meanwhile, separate bok choy leaves, then cut into 1-inch pieces. (TIP: Rinse bok choy leaves to wash away any hidden dirt.)

Cook eggs

  • Heat a large non-stick pan over medium. 
  • Add half the sesame oil to the pan, then add 1/4 tsp (1/2 tsp) chili flakes and half the sesame seeds.
  • Crack in 2 (4) eggs. Season with salt and pepper.
  • Cover and pan-fry for 2-3 min, until egg whites are set. (NOTE: The yolk will still be runny! If you prefer it more set, cook 1 min longer.)
  • Transfer eggs to a plate. Cover to keep warm.

Cook beef and veggies

  • Increase heat to medium-high. 
  • When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then the beef and mirepoix. Cook for 4-5 min, stirring occasionally, until mirepoix is tender-crisp. 
  • Add bok choy. Cook for 2-3 min, stirring constantly, until bok choy is tender-crisp and beef is cooked through.**
  • Season with 1/4 tsp (1/2 tsp) garlic salt and pepper. 
  • Transfer to a medium bowl.

Finish and serve

  • Fluff rice with a fork. 
  • To the pan with beef and veggies, add remaining sesame oil, then add rice and soy sauce. Cook for 2-3 min, stirring often, until rice, beef and veggies are well combined. Season with 1/4 tsp (1/2 tsp) garlic salt and pepper. 
  • Divide between plates, then top with fried eggs. 
  • Sprinkle remaining sesame seeds over top. 
  • Drizzle spicy mayo over top.

If you've opted to add beef, increase the heat under the same pan (from step 2) to medium-high. When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then the beef and mirepoix. Cook for 4-5 min, stirring occasionally, until mirepoix is tender-crisp. Add bok choy. Cook for 2-3 min, stirring constantly, until bok choy is tender-crisp and beef is cooked through.**Season with 1/4 tsp (1/2 tsp) garlic salt and pepper. Transfer to a medium bowl.

Fluff rice with a fork. To the pan with beef and veggies, add remaining sesame oil, then rice and soy sauce. Cook for 2-3 min, stirring often, until rice, beef and veggies are well combined. Proceed with remaining instructions as written.
