Eggs for dinner is always a great idea! These fried egg and ground beef bowls feature chili flakes for kick and sesame seeds for an extra pop of flavour and crunch, making this veggie-loaded dish a can't-miss. If you've opted to add beef, increase the heat under the same pan (from step 2) to medium-high. When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then the beef and mirepoix. Cook for 4-5 min, stirring occasionally, until mirepoix is tender-crisp. Add bok choy. Cook for 2-3 min, stirring constantly, until bok choy is tender-crisp and beef is cooked through.**Season with 1/4 tsp (1/2 tsp) garlic salt and pepper. Transfer to a medium bowl.
Fluff rice with a fork. To the pan with beef and veggies, add remaining sesame oil, then rice and soy sauce. Cook for 2-3 min, stirring often, until rice, beef and veggies are well combined. Proceed with remaining instructions as written.
