We put on our own spin on a beloved New York City sandwich staple, the classic chopped cheese, and it's ready in just 15 minutes. Layers of savoury beef, onions, melty cheddar and juicy tomato slices get a surprise flavour boost from the spicy mustard-mayo. Ingredients: Ground beef • Sandwich bun (unbleached untreated enriched wheat flour (wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), water, sea salt, yeast, malted barley flour) (barley, wheat) • Tomatoes • Cheddar cheese (pasteurized milk, modified milk ingredients, cream, bacterial culture, salt, annatto, beta-carotene, calcium chloride, microbial enzyme, cellulose, natamycin) (milk) • Spring mix (lolla rosa multi-leaf lettuce, red flash red oak lettuce, red leaf multi-leaf lettuce, green oak lettuce, bally hoo tango lettuce) • Yellow onion • Spicy mayonnaise (vegetable oil, chili peppers, frozen egg yolk, sugars (sugar, glucose), water, vinegar, salt, garlic, concentrated lemon juice, mustard, xanthan gum, acetic acid, citric acid, caramel, sodium benzoate, potassium sorbate, calcium disodium EDTA) (egg, mustard) • Whole grain mustard (water, white vinegar, mustard seeds, white wine vinegar, salt, sugar, mustard bran, citric acid, turmeric, spices, spice extract, natural flavour, xanthan gum) (mustard) • White wine vinegar (wine vinegar, potassium metabisulfite) (sulphites) • Beef stock powder (salt, sugars (dextrose, corn syrup solids, maltodextrin), hydrolyzed vegetable proteins (soy), palm oil, corn starch, dehydrated onion, caramel colour (sulphites), silicon dioxide, herbs, disodium inosinate, disodium guanylate, spice extracts, natural flavour) (soy, sulphites).

Preparation

Toast buns and prep

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Halve buns.
  • Arrange buns directly on the top rack of the oven, cut-sides up. Broil for 1-2 min, until browned. (TIP: Keep an eye on them so they don't burn!)
  • Thinly slice half the tomatoes. Cut remaining tomato into 1/4-inch pieces. Season with salt and pepper.

Cook filling

  • In a large non-stick pan, heat 1/2 tbsp (1 tbsp) oil over medium-high.
  • When the pan is hot, add beef and onions. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Carefully drain and discard excess fat.
  • Add stock powder and 3 tbsp (6 tbsp) water. Cook for 1-2 min, stirring often, until fragrant. 
  • Reduce heat to low.
  • Sprinkle cheese over top of beef-onion mixture. Cook, covered, for 2-3 min, until cheese has melted.

Make salad dressing

  • Meanwhile, in a large bowl, whisk together vinegar, half the whole grain mustard, 1 tsp (2 tsp) sugar and 1 tbsp (2 tbsp) oil. Season with salt and pepper.

Finish and serve

  • In a small bowl, combine spicy mayo and remaining whole grain mustard.
  • Spread spicy mustard-mayo on cut sides of buns. Divide filling between buns, then top with sliced tomato and some dressed spring mix.
  • Add diced tomato and remaining spring mix to the bowl with dressing. Toss to coat.
  • Divide sandwiches and salad between plates.
