Preparation

Make meatballs

  • Before starting, wash and dry all produce.  
  • In a large bowl, combine chicken, Asian Sesame Spice Blend and panko. Season with salt and pepper, then stir to combine. 
  • To a shallow bowl, add sesame seeds. 
  • Roll chicken mixture into 8 (16) equal-sized meatballs.
  • Transfer 1 meatball at a time to the shallow bowl and roll to coat with sesame seeds.

Air fry meatballs

  • Line the bottom of the air fryer basket with meatballs. Spray liberally with cooking spray.
  • Air fry meatballs on high for 10-12 min, until cooked through.**

Cook carrots and microwave rice

  • To a large non-stick pan, add carrots, honey, 1/4 cup (1/2 cup) water and 1 tbsp (2 tbsp) butter. Stir together, then bring to a simmer over medium-high. Simmer for 8-9 min, stirring occasionally, until carrots are tender and liquid has evaporated. Season with salt and pepper. 
  • When chicken is almost done, microwave rice following the package directions.

Finish and serve

  • Thinly slice green onions.
  • In a small microwave-safe bowl, combine soy sauce, hoisin and 2 tbsp (4 tbsp) water. Cover with plastic wrap and microwave on high for 20-30 sec, until warmed through. 
  • Divide rice, meatballs and carrots between bowls.
  • Drizzle soy-hoisin sauce over top. 
  • Sprinkle green onions over top.
