Preparation

Roast potatoes

  • Before starting, preheat the oven to 450˚F.
  • Wash and dry all produce.
  • Remove any brown spots from potatoes and cut into 1/4-inch rounds.
  • To a parchment-lined baking sheet, add potatoes, half the Applewood Smoke Spice and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat.
  • Roast in the middle of the oven for 23-25 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the top and middle of the oven, rotating sheets halfway through.)

Prep halloumi

  • Cut halloumi into 1/4-inch slices. 
    Using a strainer, rinse halloumi in cold water, then pat dry with paper towels.
  • Season with the remaining Applewood Smoke Spice and pepper.

Cook halloumi

  • Heat a large non-stick pan over medium.
  • When hot, add halloumi to the dry pan. (NOTE: Don't crowd the pan. For 4 servings, cook in batches) Cook for 2-3 min per side, until golden.

Prep slaw and sauce

  • Meanwhile, thinly slice green onions. 
  • To a medium bowl, add green onions and half the ranch. Season with salt and pepper, then toss to combine. 
  • To the bowl, add cabbage. Toss to combine. 
  • To a large microwavable bowl, add 3 tbsp (6 tbsp) butter. Melt butter in the microwave. Add hot sauce, then whisk to combine. Set aside.

Toast buns

  • Halve buns.
  • On an unlined baking sheet, arrange buns, cut-side up. Toast buns in the middle of the oven for 4-5 min, until golden. (TIP: Keep an eye on them so they don't burn.)
  • To the large bowl with Buffalo-butter sauce, add halloumi. Toss to coat.

Finish and serve

  • Divide halloumi between buns, drizzling any sauce from the bowl over halloumi.
  • Top with cabbage slaw. 
  • Divide sandwiches and roasted potato coins between plates. 
  • Serve remaining ranch sauce on the side for dipping.
