Preparation

Cook potatoes and peas

  • Before starting, wash and dry all produce. 
  • Remove any brown spots from potatoes, then cut into 1/4-inch pieces.
  • To a large non-stick pan, add potatoes, peas, 2 tsp salt and enough water to cover  (use same for 4 servings). Cover and bring to a boil over high. Cook, uncovered for 8-12 min, until fork-tender. 
  • Strain and keep potatoes and peas in strainer.

Prep

  • Meanwhile, peel, then cut onion into 1/2-inch pieces.
  • Roughly chop cilantro.

Cook beef

  • Once potatoes are done, in the same pan, heat 1/2 tbsp (1 tbsp) oil over medium-high. When the pan is hot, add beef and onions. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**  
  • Add Indian Spice Blend and cook for 30 sec, stirring often, until fragrant. Season with salt and pepper.

Cook veggies

  • Add potatoes, peas and 2 tbsp (4 tbsp) water to the pan with beef mixture. Season with salt and pepper. Cook for 5 min, stirring often, until potatoes are golden.

Finish and serve

  • Divide potato, pea and beef mixture between plates.
  • Drizzle mango chutney and yogurt sauce over top. 
  • Sprinkle with crispy shallots and cilantro.
